Almond Berry Oatmeal

INGREDIENTS:

  • Rolled oats, uncooked - 4 tbsp (24 grams)
  • Blueberries - 3 tbsp (30 grams)
  • Raspberries - 3 tbsp (23 grams)
  • Soy milk, unsweetened - 5 tbsp (75 grams)
  • Almond meal - 2 tbsp (13 grams)(finely ground almonds)(for our favorite brand click here)

INSTRUCTIONS:

  1. Add the soy milk and oats to a large bowl and place in the microwave for 1 minute. Carefully remove, mix in the blueberries and raspberries, and heat for another minute.
  2. Carefully remove from microwave (plate will be hot) and mix in the almond meal. Serve and enjoy!

Nutritionist notes: Blueberries and raspberries are very rich in antioxidants. It is recommended to consume one small serving of berries daily or at least every other day. You can use fresh or frozen berries for this recipe. You can also replace the soy milk with unsweetened almond milk, but the protein content of the recipe will decrease since almond milk has less protein.
