Asian Chicken Salad (Pre-Op)

INGREDIENTS:
- Carrot - 2 medium (160 grams)
- Romaine lettuce, chopped - 4 large handfuls (200 grams)
- Purple cabbage, chopped - 2 cups (130 grams)
- Scallions - 1 stalk (15 grams)
- Cilantro, fresh leaves, chopped - 2 tbsp (4 grams)
- Chicken breast, skinless, uncooked - 300 grams or 10.5 oz
- Olive oil - 1 tsp (5 grams)
- Black pepper, ground - 1/4 tsp
INGREDIENTS FOR DRESSING:
- Sesame oil - 2 tsp (9 grams)
- Soy sauce, low sodium - 1 tbsp (15 grams)
- Rice vinegar - 1 tbsp (15 grams)
- Agave syrup - 1 tbsp (21 grams)
- Garlic clove, minced - 1 medium (4 grams)
- Ginger root, minced - 1/2 tbsp (6 grams)
- Red chili flakes - 1/4 tsp (optional)
- Water - 1 tbsp
INSTRUCTIONS:
- Grate the carrot. Chop the romaine lettuce, purple cabbage, scallions, and cilantro. Mix in a large bowl.
- Chop or slice the chicken breast. Place a pan over medium heat. Once hot, add the olive oil and chicken. Season with black pepper and cook for about 10 minutes or until fully cooked. Set aside when done and let it cool down.
- Mix all the dressing ingredients in a small sealable jar. Seal and shake to combine.
- Add the chicken to the salad and mix in the dressing only when serving. Enjoy!
*Note: Divide equally by the listed number of servings. Store the dressing separately and add only when serving. Stays fresh in the refrigerator for 2-3 days.
