Avocado Chickpea Salad with Pickled Red Onions

INGREDIENTS:

  • Red onion - 1/2 medium (75 grams)
  • Apple cider vinegar - 1/2 cup (120 grams)
  • Water - 1/3 cup (80 grams)
  • Coconut or brown sugar - 1 tsp (4 grams)
  • Avocado - 1 small meidum (100 grams)
  • Parsley, fresh leaves - 1 small handful (10 grams)
  • Almonds - 1/2 oz (14 grams)
  • Chickpeas, cooked - 1 cup (164 grams)
  • Hemp seeds - 2 tsp (7 grams)
  • Sea salt - 1/4 tsp
  • Black pepper, ground - 1/4 tsp

INSTRUCTIONS:

  1. Slice the red onion and add it to a small pot along with the apple cider vinegar, water, and coconut sugar. Mix, cover, bring to a boil and then remove from heat. Let stand for 5 minutes and then drain the liquids.
  2. Chop the avocado and parsley. Slice the almonds.
  3. Drain and rinse the chickpeas.
  4. Mix everything in a bowl along with the pickled red onions (check notes for amount). Enjoy!

*Note: The pickled red onion will make enough for 4 servings so each serving should have about 20 grams of it. You only need to make pickled red onions once every 2 weeks since they stay fresh in the refrigerator for 2 weeks. For the rest of the ingredients, divide equally by the listed number of servings. Stays fresh in the refrigerator for 1 day. The avocado may turn a bit brown when stored but this is normal, it is still good to eat.
