Bluebery Almond Chia Pudding

INGREDIENTS:

  • Chia seeds - 1 tbsp (12 grams)
  • Almond meal - 2 tbsp (13 grams)
  • Soy milk, unsweetened - 4 tbsp (60 grams)
  • Blueberries - 3 tbsp (30 grams)
  • Banana - 1/4 medium (30 grams)

INSTRUCTIONS:

  1. Add the chia seeds, almond meal and soy milk to a small mason jar or sealable bowl. Seal and shake for about 20 seconds to make sure everything gets mixed properly. Place in the refrigerator overnight or for at least 4 hours.
  2. Once ready, add the banana (either mash it or slice it) and the blueberries. Gently mix. Enjoy!

*Note: You can freeze the unused banana to better preserve it and microwave it for a bit when you need to use it again for this recipe. You can also make more than 1 serving to have them ready in the fridge. Stays fresh for up to 2 days.

Nutritionist notes: Chia seeds make a great addition to a gastric sleeve diet. They are packed with calcium and dietary fiber, plus have a good amount of protein and omega-3 fatty acids. However, it is not recommended for patients to consume chia seeds until at least 3 months after surgery if no complications have been presented.
