Breakfast Oat Cookies

INGREDIENTS:
- Rolled oats, uncooked - 1 3/4 cup (168 grams)
- Chia seeds - 1 tbsp (12 grams)
- Vanilla-flavored protein powder - 1 tbsp (7 grams)(can substitute with equal amount of all-purpose flour if desired)
- Cinnamon, ground - 1/2 tsp
- Baking powder - 1/2 tsp
- Egg white - 2 large (66 grams)
- Agave syrup - 2 tbsp (42 grams)
- Soy milk, unsweetened - 1/3 cup (80 grams)
- Blueberries - 1/4 cup (38 grams)
- Raspberries - 1/4 cup (31 grams)
- Non-stick oil spray
INSTRUCTIONS:
- Pre-heat the oven to 350°F or 175°C.
- In a large bowl, add the rolled oats, chia seeds, protein powder, cinnamon and baking powder. Mix.
- Add the egg whites, agave syrup, and soy milk. Mix until well combined and then gently mix in the berries.
- Coat a baking sheet with non-stick oil spray. Use your hands to form 6 cookies and carefully place them one by one on the baking sheet (tip: it is best for the berries to end up on the top part of the cookie for it to have a solid base). Bake for 25 minutes. Let cool down for about 10 minutes. Enjoy!
*Note: Divide equally by the listed number of servings. Each serving size equals 2 cookies. Store in a seal-tight container in the refrigerator for up to a week. Eat cold or microwave for no more than 15 seconds before eating.

Nutritionist notes: You can use fresh or frozen berries for the recipe and the result will be the same, with the exception that frozen berries may stain the cookies a bit so they will look a bit purple. They will still taste great though!
