Buffalo Chickpea Salad

INGREDIENTS:
- Olive oil - 1 tsp (5 grams)
- Chickpeas, cooked - 1 1/2 cup (246 grams)
- Garlic powder - 1/4 tsp
- Sea salt - 1/4 tsp
- Black pepper, ground - 1/8 tsp
- Hot sauce - 1 tbsp (15 grams)
- Honey, raw and unfiltered - 1 tbsp (21 grams)
- Cucumber - 1/2 medium (150 grams)
- Avocado - 1 small-medium (100 grams)
- Hemp seeds - 1 1/2 tsp (5 grams)
INSTRUCTIONS:
- Place a large pan over medium heat. Once hot, add the olive oil and chickpeas. Season with garlic powder, sea salt, and black pepper. Cook for 8 minutes. Stir occasionally.
- Reduce the heat to low and add the hot sauce and honey. Mix and cook for 1-2 minutes more. Stir frequently and then turn off heat.
- Let the chickpeas cool down. Meanwhile, chop the cucumber and avocado.
- Divide the ingredients equally by the listed number of servings and combine the chickpeas with the avocado and cucumber only when serving. Garnish with 1/2 tsp of hemp seeds per serving. Enjoy!
*Note: Divide equally by the listed number of ingredients. Stays fresh in the refrigerator for 2-3 days. It is recommended to store the chickpeas separate from the avocado and cucumber. Use only the avocado that you need at a single time (1/3 or 33 grams) and store the remaining avocado in an air-tight container in the refrigerator. Tip: store the avocado in together with chopped onion to help is stay fresh and green. You can add a bit more hot sauce once cooked if desired.
