Buffalo Potato & Chicken Salad

INGREDIENTS:

  • Red or white potato - 1 medium (200 grams)
  • Chicken breast, skinless, uncooked - 240 grams or 8.5 oz
  • Olive oil - 1/2 tbsp (7 grams)
  • Garlic powder - 1/4 tsp
  • Sea salt - 1/4 tsp
  • Black pepper, ground - 1/8 tsp
  • Greek yogurt, non-fat, plain - 2 oz (57 grams)
  • Hot sauce - 1 tbsp (15 grams)(we like this one)
  • Honey, raw and unfiltered - 1/2 tbsp (11 grams)
  • Apple cider vinegar - 1 tsp (5 grams)
  • Red onion, chopped - 3 tbsp (30 grams)
  • Parsley, fresh leaves - 3 tbsp (6 grams)(or to taste)

INSTRUCTIONS:

  1. Chop the potato into small pieces. Butterfly cut the chicken breast (slice horizontally across the middle to get two thinner pieces) and then chop into small pieces.
  2. Place a large pan over medium heat. Once hot, add the olive oil, potatoes and chicken. Season with garlic powder, sea salt, and black pepper. Cook for 10-12 minutes or until the chicken is fully cooked and the potatoes start getting crispy brown on the edges. Once done, remove from heat and let cool for about 5 minutes.
  3. Combine the Greek yogurt, hot sauce, honey, and apple cider vinegar in a large bowl. Once the chicken and potatoes have cooled down, add them to the bowl and coat with the dressing.
  4. Serve and garnish with chopped red onion and parsley (1 tbsp per serving of each). Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for 3-4 days. If desired, you may add a bit more hot sauce, depending on your tolerance of spicy food.
