Buffalo Potato & Chicken Salad

INGREDIENTS:
- Red or white potato - 1 medium (200 grams)
- Chicken breast, skinless, uncooked - 240 grams or 8.5 oz
- Olive oil - 1/2 tbsp (7 grams)
- Garlic powder - 1/4 tsp
- Sea salt - 1/4 tsp
- Black pepper, ground - 1/8 tsp
- Greek yogurt, non-fat, plain - 2 oz (57 grams)
- Hot sauce - 1 tbsp (15 grams)(we like this one)
- Honey, raw and unfiltered - 1/2 tbsp (11 grams)
- Apple cider vinegar - 1 tsp (5 grams)
- Red onion, chopped - 3 tbsp (30 grams)
- Parsley, fresh leaves - 3 tbsp (6 grams)(or to taste)
INSTRUCTIONS:
- Chop the potato into small pieces. Butterfly cut the chicken breast (slice horizontally across the middle to get two thinner pieces) and then chop into small pieces.
- Place a large pan over medium heat. Once hot, add the olive oil, potatoes and chicken. Season with garlic powder, sea salt, and black pepper. Cook for 10-12 minutes or until the chicken is fully cooked and the potatoes start getting crispy brown on the edges. Once done, remove from heat and let cool for about 5 minutes.
- Combine the Greek yogurt, hot sauce, honey, and apple cider vinegar in a large bowl. Once the chicken and potatoes have cooled down, add them to the bowl and coat with the dressing.
- Serve and garnish with chopped red onion and parsley (1 tbsp per serving of each). Enjoy!
*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for 3-4 days. If desired, you may add a bit more hot sauce, depending on your tolerance of spicy food.
