Chipotle Lime Shrimp & Quinoa Bowl

INGREDIENTS:

  • Quinoa, cooked - 1 cup (185 grams)
  • Olive oil - 1 tbsp (14 grams)
  • Shrimp, uncooked, peeled and deveined - 210 grams or 7.5 oz
  • Chili chipotle pepper, ground - 1/2 tsp
  • Cumin, ground - 1/4 tsp
  • Paprika, ground - 1/4 tsp
  • Garlic powder - 1/4 tsp
  • Sea salt - 1/4 tsp
  • Black pepper, freshly ground - 1/8 tsp
  • Lime, juice only - 1/2 medium
  • Corn kernels, frozen - 1 cup (135 grams)
  • Cilantro, freshly chopped leaves - 3 tbsp (6 grams)(optional)

INSTRUCTIONS:

  1. Cook the quinoa if using uncooked (1/3 cup uncooked).
  2. Place the shrimp in a bowl and add half of the olive oil (check notes for details on shrimp). Coat evenly and then add the chili chipotle pepper, cumin, paprika, garlic powder, sea salt and black pepper. Coat the shrimps evenly with the spices.
  3. Place a large pan over medium heat. Once hot, add the remaining olive oil and the shrimp. Cook for 3-4 minutes (flip once halfway through) and then add the lime juice. Mix gently and turn off the heat. The shrimp should go from being translucent to opaque. Do not overcook them or they may become rubbery.
  4. Unfreeze the corn in the microwave or by boiling it in a pot with a bit of water. Serve with the quinoa and shrimp. Garnish with chopped cilantro (optional). Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 3 days. Shrimp should be peeled, clean (deveined), and without a head. If frozen, thaw under running cold water or in the refrigerator overnight. Pat dry and remove the tails before cooking. You may also peel and devein them yourself if desired.
