Chipotle Tuna Patties

INGREDIENTS:

  • Tuna, canned, cooked - 225 grams or 8 oz
  • Egg white - 2 large (66 grams)
  • Parsley, fresh leaves, chopped - 1 tbsp (2 grams)
  • Panko bread crumbs - 3 tbsp (11 grams)
  • Chili chipotle pepper, ground - 1/4 tsp
  • Sea salt - 1/4 tsp
  • Garlic powder - 1/4 tsp
  • Olive oil - 1 tbsp (14 grams)
  • Black beans, cooked - 1/3 cup (57 grams)
  • Corn kernels, frozen - 1/3 cup (45 grams)

INGREDIENTS FOR CHIPOTLE DRESSING:

  • Greek yogurt, non-fat, plain - 3 oz (85 grams)
  • Chili chipotle pepper, ground - 1/4 tsp
  • Sea salt - 1/4 tsp
  • Agave syrup (1/2 tsp 4 grams)

INSTRUCTIONS:

  1. Drain the tuna and add it a large bowl together with the egg whites, parsley, panko bread crumbs, chipotle paste, sea salt, and garlic powder. Mix gently with a spoon until well combined.
  2. Divide the mix into 6 portions and use your hands to form patties out of each. Make sure they are nice and tight on the edges. You can place them on a cutting board when ready.
  3. Place a large pan over medium heat. Once hot, add the olive oil and carefully place the patties on the pan. Cook for 2-3 minutes on each side and then turn off the heat. If you're pan is not big enough to fit all of them you may need to do 2 rounds so divide the olive oil as necessary.
  4. Unfreeze the corn and mix the dressing ingredients in a small bowl.
  5. Serve the tuna patties with black beans, corn, and the chipotle dressing. Enjoy!

*Note: Divide equally by the listed number of serving. Stays fresh in the refrigerator for up to 3 days. You may add more chipotle to the dressing if you want to make it spicier.
