Chocolate Superfood Energy Balls

INGREDIENTS:
- Pumpkin seeds - 2 tbsp (20 grams)
- Dates, medjool, pitted - 5 medium (120 grams)
- Rolled oats, uncooked - 3/4 cup (72 grams)
- Almond butter - 4 tbsp (64 grams)
- Raw cacao powder - 2 tbsp (11 grams)
- Chia seeds - 1 tbsp (12 grams)
- Hemp seeds - 1 tbsp (10 grams)
- Coconut oil - 1/2 tbsp (7 grams)
- Pure vanilla extract - 1/4 tsp
- Sea salt - 1/8 tsp
INSTRUCTIONS:
- Add the pumpkin seeds to a food processor by themselves and mix to break them down a bit.
- Add all of the remaining ingredients and mix until pasty.
- Use your hands to squeeze the paste to make it compact and form 1-inch sized balls. Repeat until there is no more mixture left (should make around 10 balls).
- Eat as is or place in the refrigerator for 30 minutes before eating. Enjoy!
**Note: Stays fresh in the refrigerator for 5-7 days in a sealed container. A food processor is needed for this recipe; a blender will not give you the same results.
