Cinnamon Cottage Cheese Pancakes

INGREDIENTS:
- Cottage cheese, low-fat 2% - 1/2 cup (113 grams)
- Rolled oats, uncooked - 1/2 cup (48 grams)
- Egg, whites only - 3 large (99 grams)
- Baking powder - 1/2 tsp
- Cinnamon, ground - 1/2 tsp
- Pure vanilla extract - 1/4 tsp
- Strawberries - 2 oz (57 grams)
- Pure maple syrup - 1 tbsp (20 grams)
- Non-stick oil spray
INSTRUCTIONS:
- Mix all the ingredients except the strawberries and maple syrup in a food processor until well blended. The batter will make 4 small pancakes.
- Place a pan over medium-low heat. Once hot, spray the pan with a bit on non-stick oil spray and add about 1/4 of a cup of the batter. Use a spoon to give it a nice round shape. Cook for slightly less than 3 minutes on each side. Repeat until you use all the batter, adding a bit more oil spray in between rounds.
- Serve with 1 ounce of fresh strawberries and 1/2 tbsp of maple syrup per serving. Enjoy!
*Note: Divide equally by the listed number of servings. Add maple syrup only when serving. Stays fresh in the refrigerator for 2-3 days. Since these pancakes have a lot more protein than traditional pancakes, they will be slightly denser and have a bit less fluff but they still taste amazing! Tip: Use 2 pans instead of 1 to cut the cooking time in half.
