Creamy Butternut Cashew Soup

INGREDIENTS:
- Butternut squash, cubed - 2 cups (280 grams)
- Yellow onion - 1/3 medium (53 grams)
- Garlic clove - 1 medium (4 grams)
- Ginger - 1/2 tbsp (5 grams)
- Olive oil - 1 tbsp (14 grams)
- Vegetable broth - 2 cups (480 grams)
- Greek yogurt, non-fat, plain - 2 oz (57 grams)
- Cashew butter - 2 tbsp (32 grams)(can substitute with almond butter)
- Italian seasoning - 1/2 tsp
- Basil, dried leaves - 1/4 tsp
- Cumin, ground - 1/4 tsp
- Sea salt - 1/2 tsp
- Black pepper, ground - 1/4 tsp
INSTRUCTIONS:
- Peel the butternut squash and cut it into cubes. To learn how to peel and cube watch this video.
- Chop the onion and mince the garlic and the ginger.
- Mix all the spices in a small bowl: Italian seasoning, basil, cumin, sea salt, and black pepper.
- Place a medium/large pot over medium heat. Once hot, add the olive oil and onion. Cook for 2 minutes.
- Add the butternut cubes, ginger, garlic and spices. Cook for another 2 minutes.
- Add the vegetable broth. Mix and cover with a lid. Cook for 15 minutes (the butternut should be easily broken with a fork).
- Carefully transfer to a blender and add the cashew butter and Greek yogurt. Blend until smooth (no chunks). Serve and enjoy!
*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for 2-3 days. Any leftover uncooked butternut squash stays fresh in the fridge for 1-2 weeks (in an airtight container).
