Crunchy Thai Mason Jar Salad

INGREDIENTS:

  • Rotisserie chicken, cooked, skinless, light and dark meat combined - 1 1/2 oz (42 grams)
  • Purple cabbage, chopped/shredded - 1 oz (28 grams)
  • Romaine lettuce, chopped - 1 oz (28 grams)(or your favorite leafy green)
  • Carrot, grated - 1 oz (28 grams)
  • Peanuts, raw and unsalted - 1/2 oz (14 grams)

INGREDIENTS FOR DRESSING:

  • Soy sauce, low sodium - 1/2 tbsp (8 grams)
  • Agave syrup - 1 tsp (7 grams)
  • Rice vinegar - 1 tsp (5 grams)
  • Peanut butter - 1/2 tbsp (8 grams)(make sure it has no added oils or sugars)
  • Water - 1/2 tbsp (8 grams)

INSTRUCTIONS:

  1. Chop the chicken, purple cabbage, and romaine lettuce. Grate the carrot.
  2. In a 12 oz mason jar, add all dressing ingredients and whisk until well combined.
  3. Add the remaining ingredients, starting with the purple cabbage (to prevent the other ingredients from getting mushy). Seal the jar.
  4. When ready to eat simply give it a nice shake to evenly spread the dressing and enjoy!

*Note: Stays fresh in the refrigerator for 1-2 days.
