Easy Tuna Patties

INGREDIENTS:
- Tuna, canned, cooked - 225 grams or 8 oz
- Egg, white - 2 large (66 grams)
- Parsley, fresh leaves, chopped - 1 tbsp (2 grams)(can replace with 1/4 tsp dried parsley)
- Panko bread crumbs - 3 tbsp (11 grams)
- Sea salt - 1/4 tsp
- Garlic powder - 1/4 tsp
- Olive oil - 1 tbsp (14 grams)
INSTRUCTIONS:
- Drain the tuna and add it a large bowl together with the egg whites, parsley, panko bread crumbs, sea salt, and garlic powder. Mix gently with a spoon until well combined.
- Divide the mix into 6 portions and use your hands to form small patties out of each. Make sure they are nice and tight on the edges. You can place them on a cutting board when ready.
- Place a large pan over medium heat. Once hot, add the olive oil and carefully place the patties on the pan. Cook for 2-3 minutes on each side and then turn off the heat. If you're pan is not big enough to fit them all you may need to do 2 rounds so divide the olive oil as necessary.
- Serve and enjoy!
*Note: Divide equally by the listed number of serving. Stays fresh in the refrigerator for up to 3 days. You may serve the patties with 1 tbsp of plain, non-fat Greek yogurt if desired.
