Easy Vegetable Stir Fry (Pre-Op)

INGREDIENTS:

  • Cauliflower, raw, fresh - 2 cups (200 grams)
  • Water - 2 tbsp
  • Sea salt - 1/4 tsp
  • Sesame oil - 1 tbsp (14 grams)
  • White mushrooms, sliced - 100 grams or 3.5 oz
  • Sugar snap peas, with pod, whole - 2 cup (126 grams)
  • Red bell pepper, sliced - 1 medium (140 grams)
  • Garlic clove, minced - 1 medium (4 grams or 1 tsp)
  • Edamame beans, cooked - 1 1/2 cup (233 grams)
  • Soy sauce, low sodium - 1 1/2 tbsp (23 grams)
  • Agave syrup - 1/2 tbsp (11 grams)
  • Sesamse seeds - 1 tsp (3 grams)
  • Scallions - 1/2 stalk (8 grams)(optional)

INSTRUCTIONS:

  1. Make the cauliflower rice: Grate the cauliflower. Place a large pan over medium heat. Once hot, add the water, cauliflower, and sea salt. Cook for about 2 minutes. Stir frequently. Transfer to a clean plate.
  2. Keep the same pan over medium heat and add the sesame oil, mushrooms, sugar snap peas, bell pepper, and garlic. Cook for about 4 minutes and then add the edamame beans, peas, soy sauce, agave syrup, and sesame seeds. Stir to combine and cook for another 2 minutes. Then turn off the heat.
  3. Serve with cauliflower rice and garnish with scallions. Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 3 days. We recommend storing the cauliflower rice separate from the shrimp stir-fry to prevent it form getting mushy.

Nutritionist notes: Cauliflower rice is a great substitute for rice during your pre-op diet because it saves many calories but still makes you feel full. However, after surgery, cauliflower is a good veggie to have but should not replace rice or other whole grains, otherwise you may risk having a meal that is too low on calories. Please note that this recipe if for future gastric sleeve patients that need to lose weight before their surgery. Do not follow this recipe if you already had your surgery.
