Eggs, Turkey and Cheddar Cheese Mini Ramekins

INGREDIENTS:
- Ground turkey, 90%+ lean, uncooked - 8.5 oz (240 grams)
- Olive oil - 1/8 tsp
- Chili powder - 1/4 tsp
- Paprika, ground - 1/2 tsp
- Garlic powder - 1/4 tsp
- Sea salt - 1/8 tsp
- Black pepper, ground - 1/8 tsp
- Egg, white only - 12 large (400 grams)
- Red bell pepper - 1/3 medium (50 grams)
- Cheddar cheese - 1 oz (30 grams)
- Cilantro, fresh leaves - to taste (optional)
INSTRUCTIONS:
- Pre-heat oven to 350°F or 175°C. Place a large pan over medium heat. Once hot, add olive oil or cooking spray and the ground turkey.
- Add all spices to the ground turkey and mix properly. Cook the turkey for about 3-4 minutes or until no longer pink. Turn off the heat.
- Add all egg whites to a large bowl and whisk. Add the turkey to the egg mix together with chopped red bell pepper and cheddar cheese. Mix everything properly.
- Use olive oil or cooking spray to coat the ramekins. Recipe makes 4 servings using 6-ounce ramekins.
- Add the mix to the ramekins and place them on a baking sheet. Bake in the oven for 30-35 min. Garnish with chopped cilantro. Enjoy!
