Eggs, Turkey and Cheddar Cheese Mini Ramekins

INGREDIENTS:

  • Ground turkey, 90%+ lean, uncooked - 8.5 oz (240 grams)
  • Olive oil - 1/8 tsp
  • Chili powder - 1/4 tsp
  • Paprika, ground - 1/2 tsp
  • Garlic powder - 1/4 tsp
  • Sea salt - 1/8 tsp
  • Black pepper, ground - 1/8 tsp
  • Egg, white only - 12 large (400 grams)
  • Red bell pepper - 1/3 medium (50 grams)
  • Cheddar cheese - 1 oz (30 grams)
  • Cilantro, fresh leaves - to taste (optional)

INSTRUCTIONS:

  1. Pre-heat oven to 350°F or 175°C. Place a large pan over medium heat. Once hot, add olive oil or cooking spray and the ground turkey.
  2. Add all spices to the ground turkey and mix properly. Cook the turkey for about 3-4 minutes or until no longer pink. Turn off the heat.
  3. Add all egg whites to a large bowl and whisk. Add the turkey to the egg mix together with chopped red bell pepper and cheddar cheese. Mix everything properly.
  4. Use olive oil or cooking spray to coat the ramekins. Recipe makes 4 servings using 6-ounce ramekins.
  5. Add the mix to the ramekins and place them on a baking sheet. Bake in the oven for 30-35 min. Garnish with chopped cilantro. Enjoy!
