Fresh Garden Salad with Chicken (Pre-Op)

INGREDIENTS:

  • Chicken breast, skinless, cooked - 3 oz or 85 grams
  • Grape tomatoes - 3.5 oz or 100 grams
  • Cucumber - 1/2 medium (150 grams)
  • Spinach, fresh - 1 small handful (20 grams)
  • Parsley, fresh leaves - 1 tbsp
  • Avocado - 1/2 small-medium (50 grams)
  • Alfalfa seeds, sprouted - 1 cup (33 grams)(can replace with more spinach)
  • Lemon, juice only - to taste

INSTRUCTIONS:

  1. Season 1 to 2 chicken breasts with a pinch of salt and pepper. Cook in a large pan over medium heat with 1 tsp of olive oil per breast for about 10 minutes (flip once halfway) or until fully cooked. Chop when done. Keep leftover chicken in the refrigerator to make this salad or another recipe again later during the week.
  2. Chop the grape tomatoes, cucumber, spinach, parsley, and avocado.
  3. Add all ingredients to a large bowl. Add the lemon juice, mix gently and serve. Enjoy!

*Note: Recipe does not need dressing. The creaminess of the avocado and the lemon work great as a natural dressing. Stays fresh in the refrigerator for 1 day. Can replace chicken with 3 ounces of tuna if desired. Cooked chicken stays fresh for 3-4 days in the refrigerator.
