General Tso Chicken & Veggies

INGREDIENTS:

  • Chicken breast, skinless, uncooked - 8.5 oz (240 grams)
  • Broccoli, raw - 1 cup (100 grams)
  • Red bell pepper - 1/2 medium (70 grams)
  • Chickpeas, cooked - 1/2 cup (82 grams)
  • Giinger root, grated - 1/2 tbsp (5 grams)
  • Olive oil - 1 tbsp (14 grams)
  • Sesame seeds - 3/4 tsp

INGREDIENTS FOR SAUCE:

  • Ketchup - 1 1/2 tbsp (26 grams)(organic if possible)
  • Pure maple syrup - 1 1/2 tbsp (30 grams)
  • Soy sauce, low sodium - 1 1/2 tbsp (23 grams)
  • Sriracha - 1/2 tsp (3 grams)
  • All purpose flour or cornstarch - 1/2 tbsp (4 grams)
  • Vegetable broth, low sodium - 1/4 cup (60 grams)

INSTRUCTIONS:

  1. Add all the sauce ingredients to a small bowl and whisk until the flour is fully dissolved.
  2. Cut the chicken into small cubes. Slice the red bell pepper.
  3. Place a large pan over medium heat. Once hot, add the olive oil and chicken. Cook for 3-4 minutes.
  4. Add the broccoli, red bell pepper, chickpeas, and ginger. Cook for 5 more minutes and add the sauce. Cook for a final 2 minutes stirring frequently.
  5. Serve and garnish with sesame seeds (1/4 tsp per serving). Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for 3-4 days.
