Gluten-Free Thanksgiving Stuffing Family Recipe

INGREDIENTS:
- Yellow onion - 1 medium (160 grams)
- Carrot - 2 medium (160 grams)
- Celery - 2 stalk (80 grams)
- White mushrooms - 2 cup (192 grams)
- Cauliflower, fresh - 4 cup (400 grams)
- Rosemary, fried leaves - 1/2 tbsp
- Thyme , dried leaves - 1/2 tbsp
- Sage, dried leaves - 1 tsp
- Sea salt - 1 tsp
- Black pepper, ground - 1/2 tsp
- Olive oil - 2 tbsp
- Vegetable broth, low sodium - 1/4 cup
INSTRUCTIONS:
- Prepare your ingredients. Chop the yellow onion, carrot, celery, mushrooms, and cauliflower. Do not mix the vegetables in the same bowl. Mix all the spices in a small plate.
- Place a large pan over medium heat. Once hot, add the olive oil, onion, carrot, and celery. Cook for 5-6 minutes.
- Add the mushrooms, cauliflower, and spices. Mix so that all everything gets coated with the spices. Cook for 1-2 minutes.
- Add the vegetable broth. Cover and cook for 10 minutes. Remove the lid and cook for another 2-3 minutes or until all the broth has disappeared.
- Serve and garnish with chopped walnuts. Enjoy!
*Note: Must use fresh cauliflower otherwise the recipe will not yield the same result. This recipe is meant to be a side dish. For gastric sleeve servings, pair about 3 oz of stuffing with 2 oz of protein such as turkey or chicken breast. Recipe makes enough for 2 gastric sleeve servings plus about 6 regular servings (yields a total of 2 pounds cooked).

Nutritionist notes: This version of the traditional thanksgiving stuffing is a healthy and gastric sleeve-freindly alternative. Instead of using bread, which we don't recommend patients to eat very much of, we used cauliflower. We also replaced butter with olive oil to avoid the extra saturated fats. Adding walnuts also gives this dish a nutty, almost bread-like taste with a bit of crunch and makes it taste delicious. You can replace the walnuts with pecans if desired. Enjoy!
