Hard-Boiled Egg White Salad

INGREDIENTS:
- Egg, whole - 3 large (150 grams)
- Grape tomatoes - 40 grams or 1.4 oz
- Avocado - 1/3 small-medium (33 grams)
- Hemps seeds - 1 tsp (3 grams)
- Sea salt - 1/8 tsp
- Black pepper - 1/8 tsp
INSTRUCTIONS:
- To boil the eggs, place them in a large pot (make sure to have a lid for it) and cover them with water plus 1-2 inches. Cover the pot and bring to a boil, then reduce the heat to low or simmer and let stand for 10-12 minutes.
- Once done, drain the water (be careful because it will be hot), and replace it with cold water. Let them cool down for a minute or two.
- Peel the boiled eggs and discard the yolk. Chop them into chunks and add them to a bowl.
- Chop the tomatoes and avocado and add them to the same bowl.
- Garnish with the hemp seeds, sea salt and black pepper. Serve and enjoy!
*Note: Boiled eggs stay fresh in the refrigerator for up to 1 week, so you could try making double or triple the amount of eggs and store them to repeat this recipe later during the week. Just store them separately and in a sealed container. You can freeze the unused avocado (peeled and chopped) to better preserve it and lightly microwave it before use.

Nutritionist notes: It is highly recommended to always remove the yolks when eating eggs because they contain an extreemely high amount of cholesterol. Just two egg yolks would be more than the daily recommended limit for cholesterol. Plus, most of the protein is found on the egg whites.
