Healthy Crab Cakes

INGREDIENTS:
- Crab or imitation crab - 8 oz (226 grams)
- Greek yogurt, non-fat, plain - 2 oz (57 grams)
- Egg, whites only - 2 large (66 grams)
- Dijon mustard - 1/2 tsp (3 grams)
- Soy sauce, low sodium - 1/2 tsp (3 grams)
- Parsley, fresh leaves, finely chopped - 1 tbsp (2 grams)(can replace with 1/4 tsp dried leaves)
- Sea salt - 1/4 tsp
- Black pepper, freshly ground - 1/4 tsp
- Panko bread crumbs - 1/2 cup (30 grams)
- Olive oil - 1 tbsp (14 grams)
- Lemon, juice only - 1/4 medium (12 grams or to taste)
INSTRUCTIONS:
- Shred and roughly chop the crab meat (there should be no big chunks). This will help the patties stick together. Add to a big bowl.
- Add all other ingredients except for the olive oil and lemon juice. Mix properly.
- Spray a bit of non-stick oil in the palm of your hands (optional but recommended). Divide the mix into 6 portions and use your hands to form patties out of each. Make sure they are nice and tight on the edges. You can place them on a cutting board when ready.
- Place a large pan over medium heat. Once hot, add the olive oil and carefully place the patties on the pan. Cook for 2 minutes on each side and then turn off the heat. If you're pan is not big enough to fit all of them you may need to do 2 rounds so divide the olive oil as necessary.
- Squeeze some lemon over the patties. Serve and enjoy!
*Notes: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 3 days. Add the lemon juice only when serving the patties.
