High Protein Banana Oat Pancakes

INGREDIENTS:
- Rolled oats, uncooked - 1 cup (240 grams)
- Banana - 1/2 medium (60 grams)
- Vanillla-flavored protein powder - 4 tbsp (26 grams)
- Baking powder - 1 tsp (5 grams)
- Soy milk, unsweetened - 1 cup (240 grams)
- Coconut oil - 1 1/2 tsp (7 grams)
- Pure maple syrup - 3 tsp (20 grams)
INSTRUCTIONS:
- Add all the ingredients except the coconut oil and maple syrup to a food processor or blender. Mix for 30 seconds to a minute to make sure everything gets broken down properly.
- Place a pan over medium-low heat. Once hot, add 1/4 tsp coconut oil. Add 1/4 cup of the batter per pancake. Spread out with a spoon to give each pancake a nice round shape. Cook for about 2 minutes, flip once, and cook for another 2 minutes. Repeat with 1/4 tsp of coconut oil per pancake until you finish the batter.
- Serve and pour in the maple syrup (1 tsp per serving). Enjoy!
*Note: Recipe makes 6 pancakes. Divide equally by the listed number of servings. Stays fresh in the refrigerator for 2 days. After being stored, to heat them up wrap them in a small kitchen towel and microwave for about 30 seconds (this will help prevent them from drying up). Add the maple syrup only when serving.

Nutritionist notes: Oats can be turned into flour for a much healthier alternative than regular white or refined flour. For this and other recipes we use banana as a natural sweetener and it also helps to bend everything together. Pure maple syrup is also a natural sweetener that we use for our recipes. Do not use any flavored or artifical sweetener-based syrups. Do not add butter.
