Huevos Con Tortilla

INGREDIENTS:

  • Egg, whites only - 3 large (99 grams)
  • Yellow onion, chopped - 2 tbsp (20 grams)
  • Corn tortilla - 1 medium (28 grams)
  • Smoked turkey breast (deli meat) - 1 oz (28 grams)
  • Olive oil - 1 tsp (5 grams)
  • Sea salt - pinch
  • Hemp seeds - 1 tsp (3 grams)
  • Organic ketchup - 1 tsp (6 grams)

INSTRUCTIONS:

  1. Separate the egg whites from the egg yolks. Discard the egg yolks.
  2. Chop the onion. Cut the tortilla and turkey ham into small squares.
  3. Place a small non-stick pan over medium-low heat. Once hot, add the olive oil, tortilla and onion. Cook for 1-2 minutes stirring occasionally.
  4. Add the egg whites and a pinch of salt. Cook for 3 minutes stirring occasionally. Turn off the heat.
  5. Serve and garnish with hemp seeds and 1 tsp of ketchup or 1 tbsp of salsa. Enjoy!
