Kidney Bean Texas Caviar

INGREDIENTS:

  • Red kidney beans, cooked - 1 1/4 cup (221 grams)
  • Yelllow bell pepper - 1/2 medium (70 grams)
  • Grape tomatoes - 100 grams or 3.5 oz
  • Red onion - 1/4 medium (38 grams)
  • Hemp seeds - 2 tbsp (20 grams)

INGREDIENTS FOR DRESSING:

  • Parsley, fresh leaves - 1 small handful (10 grams)
  • Olive oil - 1 tbsp (14 grams)
  • Red wine vinegar - 2 tbsp (30 grams)
  • Oregano, dried leaves - 1/2 tsp
  • Cumin, ground - 1/4 tsp
  • Garlic powder - 1/4 tsp
  • Sea salt - 1/4 tsp

INSTRUCTIONS:

  1. Drain and rinse the kidney beans. Chop the bell pepper, grape tomatoes and red onion. Add to a bowl along with the hemp seeds.
  2. Chop the parsley. Add it to a separate bowl along with the remaining dressing ingredients and mix.
  3. Divide equally by the listed number of servings and add mix in the dressing only when serving. Enjoy!
