INGREDIENTS:
- Red kidney beans, cooked - 1 1/4 cup (221 grams)
- Yelllow bell pepper - 1/2 medium (70 grams)
- Grape tomatoes - 100 grams or 3.5 oz
- Red onion - 1/4 medium (38 grams)
- Hemp seeds - 2 tbsp (20 grams)
INGREDIENTS FOR DRESSING:
- Parsley, fresh leaves - 1 small handful (10 grams)
- Olive oil - 1 tbsp (14 grams)
- Red wine vinegar - 2 tbsp (30 grams)
- Oregano, dried leaves - 1/2 tsp
- Cumin, ground - 1/4 tsp
- Garlic powder - 1/4 tsp
- Sea salt - 1/4 tsp
INSTRUCTIONS:
- Drain and rinse the kidney beans. Chop the bell pepper, grape tomatoes and red onion. Add to a bowl along with the hemp seeds.
- Chop the parsley. Add it to a separate bowl along with the remaining dressing ingredients and mix.
- Divide equally by the listed number of servings and add mix in the dressing only when serving. Enjoy!
