Lemon Garlic Shrimp

INGREDIENTS:

  • Brown rice, cooked - 1 cup (180 grams)(can replace with quinoa if intolerant to rice)
  • Garlic clove - 2 medium (8 grams or 2 tsp minced garlic)
  • Olive oil - 1/2 tbsp (7 grams)
  • Shrimp, uncooked, peeled and deveined - 210 grams or 7.5 ounces
  • Sea salt - 1/4 tsp
  • Lemon, juice only - 1/2 medium (24 grams)
  • Parsley, fresh leaves - 3 tbsp (6 grams)(optional but highly recommended)
  • Peas, frozen - 1 cup (134 grams)

INSTRUCTIONS:

  1. Cook the brown rice if using uncooked (1/3 cup uncooked).
  2. Finely chop the garlic.
  3. Place a pan over medium heat. Once hot, add the olive oil and shrimps (check notes for details on shrimp). Cook for 2 minutes, flip, and add the garlic. Cook for 1-2 more minutes and then add the lemon juice. Mix and turn off the heat. The shrimp should be opaque when done (nothing translucent). Do not overcook them or they may become rubbery.
  4. Unfreeze the peas in the microwave or by boiling them in a pot with a bit of water. Serve with the brown rice and shrimp. Garnish with chopped parsley. Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 3 days. Shrimp should be peeled, clean (deveined), and without a head. If frozen, thaw under running cold water or in the refrigerator overnight. Pat dry and remove the tails before cooking. You may also peel and devein them yourself if desired.
