Lemon Garlic Shrimp Family Recipe
- Time: 15 minutes (if using cooked rice)

INGREDIENTS:
- Brown rice, cooked - 3 1/2 cups (630 grams)(can replace with quinoa if intolerant to rice)
- Garlic clove - 8 medium (32 grams or 8 tsp minced garlic)
- Olive oil - 2 tbsp (27 grams)
- Shrimp, uncooked, peeled and deveined - 740 grams or 26 ounces
- Sea salt - 1 tsp
- Lemon, juice only - 1 1/2 medium (72 grams)
- Parsley, fresh leaves - 1 small handful (10 grams)(optional but highly recommended)
- Peas, frozen - 3 1/2 cups (469 grams)
- Broccoli - 4 cups (400 grams)
INSTRUCTIONS:
- Cook the brown rice if using uncooked (1 1/4 cup uncooked).
- Finely chop the garlic.
- Place a pan over medium heat. Once hot, add the olive oil and shrimps (check notes for details on shrimp). Season with salt and cook for 1 minute. Then stir in the garlic and cook for 3 more minutes. Add the lemon juice, mix and turn off the heat. The shrimp should be opaque when done (nothing translucent). Do not overcook them or they may become rubbery.
- Unfreeze the peas in the microwave or by boiling them in a pot with a bit of water. Lightly steam the broccoli.
*Gastric Sleeve servings: Serve 2 ounces of shrimp together with 1/3 cup of brown rice and 1/3 cup peas. Do not add broccoli. Garnish with chopped parsley to taste. Enjoy!
*Regular servings: Divide the remaining shrimp, brown rice, peas, and broccoli by the listed number of regular servings. Garnish with chopped parsley to taste. Enjoy!
*Note: Pour over the shrimp any leftover juices, they taste amazing! Stays fresh in the refrigerator for up to 3 days. Shrimp should be peeled, clean (deveined), and without a head. If frozen, thaw under running cold water or in the refrigerator overnight. Pat dry and remove the tails before cooking. You may also peel and devein them yourself if desired. Can replace brown rice with the same amount of quinoa if intolerant to rice.
