Low Carb Tofu Taco Bowl

INGREDIENTS:

  • Tofu, unflavored, extra-firm - 250 grams or 8.8 oz
  • Olive oil - 1 tbsp (14 grams)
  • Soy sauce, low sodium - 2 tsp (10 grams)
  • Taco seasoning - 2 tbsp (click here for our favorite brand)
  • Romaine lettuce, chopped - 3 small handfuls (60 grams)
  • Black beans, cooked - 3/4 cup (129 grams)
  • Corn kernels - 3/4 cup (101 grams)
  • Red onion, chopped - 3 tbsp (30 grams)
  • Red or green salsa - 3 tbsp
  • Cilantro, chopped fresh leaves - 3 tbsp

INSTRUCTIONS:

  1. Drain the tofu block from any excess water and add it to a large bowl. Mash it with a fork, breaking it apart as much as possible to form small crumbles.
  2. Place a large pan over medium heat. Once hot, add the olive oil and tofu crumbles. Cook for 5 minutes stirring occasionally and then add the soy sauce and taco seasoning. Mix and cook for 5 more minutes. Turn off the heat.
  3. Drain and rinse the black beans and unfreeze the corn kernels in the microwave or by boiling them in a bit of water.
  4. Serve all ingredients in a bowl and garnish with salsa and chopped cilantro (only when serving). Enjoy!

*Note: Recipe is medium hot (spicy). Divide equally by the listed number of servings. For the salsa, feel free to use your preferred brand and use either red or green and according to your spiciness preferences. Add the salsa and lettuce only when serving, not storing. Stays fresh in the refrigerator for 3-4 days.

Nutritionist notes: This is an easy recipe to get in your greens. Salads can sometimes have too much fat from the dressings and be counterproductive in our weight loss efforts. Switching it up with some salsa or avocado for example can taste just as good and be much healthier! Tip: Try to buy organic tofu.
