Low-Calorie Egg & Tuna Salad (Pre-Op)

INGREDIENTS:
- Egg, whole - 4 large (200 grams)
- Asparagus, fresh - 6 oz (170 grams)
- Olive oil - 1 tsp (5 grams)
- Sea salt - 1/8 tsp (pinch)
- Black pepper - 1/8 tsp (pinch)
- Spinach, fresh - 4 small handfuls (120 grams)
- Grape tomatoes - 6 oz (170 grams)
- Red onion - 1/3 medium (50 grams)
- Tuna, canned, cooked - 5 oz (140 grams)
- Lemon, juice only - 1/2 medium or to taste
INSTRUCTIONS:
- To boil the eggs, place them in a large pot (make sure to have a lid for it) and cover them with water plus 1-2 inches. Cover the pot and bring to a boil, then reduce the heat to low or simmer and let stand for 10-12 minutes. Skip to Step 4 while they cook.
- Once done, drain the water (be careful because it will be hot), and replace it with cold water. Let them cool down for a minute or two.
- Peel the boiled eggs and discard the yolk. Chop them into chunks and set aside.
- While the eggs are cooking, chop the asparagus. Place a pan over medium heat. Once hot, add the olive oil and asparagus. Season with salt and pepper and cook for about 3 minutes.
- Chop the spinach, tomatoes and red onion. Add them to a large bowl together with the egg whites, cooked asparagus, tuna, and lemon juice. Mix gently. Serve and enjoy!
*Note: Divide equally by the listed number of ingredients. Stays fresh in the refrigerator for 2 days. Make sure to use tuna that is canned in water and not oil.
