Mason Jar Omelette

INGREDIENTS:
- Egg, white - 3 large (99 grams)
- Smoked turkey breast (deli meat) - 1 oz (28 grams)
- Spinach, fresh, chopped - 1/2 oz (14 grams)
- Hemp seeds - 1/2 tsp (2 grams)
- Olive oil - 1/2 tsp (2 grams)
- Sea salt - 1/8 tsp (pinch)
- Black pepper, freshly ground - 1/8 tsp (pinch)
- Avocado - 1/4 small-medium (25 grams)
- Scallions - 1/4 stalk (4 grams or to taste)
INSTRUCTIONS:
- Add all ingredients except the avocado and scallions to a mason jar that's at least 12 ounces big. Seal and shake to mix the ingredients.
- Place it in the microwave for 1:30 minutes (without the lid). Remove and let it cool down for about 2 minutes.
- Garnish with avocado and scallions to taste. Enjoy!
*Note: Stays fresh in the refrigerator for 1-2 days. Use a large mason jar because the egg whites will rise when microwaved and may overflow if the container is too small. A 12 oz mason jar works perfectly and anything bigger than that will also work.
