Mexican Picadillo Family Recipe
- Time: 25-30 minutes (if using cooked rice)
- Servings: 4 Regular + 2 Gastric sleeve

INGREDIENTS:
- Brown rice, cooked - 3 cups (540 grams)(or 1 1/2 cup uncooked)
- Yellow onion - 2/3 medium (107 grams)
- White potato - 2 small (240 grams)
- Carrot - 2 medium (160 grams)
- Olive oil - 1 tbsp (14 grams)
- Ground beef, 90%+ lean, uncooked - 560 grams or 20 ounces
- Garlic clove, minced - 2 medium (8 grams or 2 tsp minced garlic)
- Sea salt - 1 tsp
- Black pepper, ground - 1/2 tsp
- Oregano, dried leaves - 1/2 tsp
- Tomato puree - 2 cups (480 grams)(Blended tomatoes, not tomato paste. Can substitute with crushed tomatoes)
- Peas, frozen - 1 cup (134 grams)
- Cilantro/coriander, freshly chopped - to taste (optional)
INSTRUCTIONS:
- Cook the rice if using uncooked (1 1/2 cup uncooked).
- Chop the onion, potato, and carrot. You may peel the potato and carrot if desired (optional).
- Place a large pan over medium heat. Once hot, add the olive oil and chopped onion. Cook for about 1 minute and then add the potatoes, carrots, and garlic. Cook for 3-4 minutes more.
- Add the ground beef and season with salt, pepper, and oregano. Cook for about 10 minutes or until fully cooked. Stir frequently.
- Mix in the tomato puree and frozen peas. Reduce the heat to low and cover. Let stand for 5 minutes and then turn off the heat.
Gastric sleeve serving: Serve 170 grams or 6.0 ounces of the picadillo. Do not add rice. Garnish with cilantro (optional). Makes 2 gastric sleeve servings. Enjoy!
Regular servings: Divide the remaining picadillo by the listed number of regular servings and serve together with 3/4 cup of cooked brown rice per serving. Garnish with cilantro (optional). Enjoy!
*Note: Stays fresh in the refrigerator for 3-4 days.
