Mini Protein Waffles

INGREDIENTS:

  • Spelt or whole-wheat flour - 1/2 cup (60 grams)
  • Vanilla-flavored protein powder - 3 tbsp (20 grams)
  • Flax seeds, ground - 1 1/2 tbsp (11 grams)
  • Baking powder - 2 tsp (9 grams)
  • Egg, white only - 1 large (33 grams)
  • Almond milk, unsweetened - 3/4 cup (180 grams)
  • Blueberries - 3 oz (85 grams)
  • Pure maple syrup - 3 tsp (20 grams)
  • Peanut or almond butter - 3 tbsp (48 grams)
  • Non-stick oil spray

INSTRUCTIONS:

  1. In a large bowl mix the flour, protein powder, ground flax seeds, and baking powder.
  2. Add the egg white and almond milk. Whisk thoroughly.
  3. Turn on your waffle maker. Once ready, spray with non-stick oil and add the necessary amount of batter to make one waffle at a time. Size and cooking time may vary depending on your waffle makers. If you are using the Dash mini waffle maker like we did, then cook each waffle for 3 minutes (it should make 6 mini waffles).
  4. Serve when ready together with 1 oz of blueberries (or your berry of choice), 1 tsp maple syrup, and 1 tbsp peanut or almond butter. Enjoy!

*Note: Divide equally by the listed number of servings. Add the maple syrup and nut butter only when servings. Stays fresh in the refrigerator for about 3 days. Pro tip: reheat your leftover waffles in the toaster for a nice toasty crunch!

Nutritionist notes: The extra tablespoon of nut butter gives this recipe a nice boost of protein and healthy fats. Make sure to always buy 100% natural nut butters. Check the ingredients list and avoid those that contain any added sugars or oils. The only ingredient listed should be roasted nuts (a bit of salt is ok).
