Mustard Chicken & Potato Salad

INGREDIENTS:
- White potato - 1 medium (160 grams)
- Rotisserie chicken, cooked, skinless, light and dark meat combined - 6 oz (170 grams)
- Green beans (string beans), chopped - 3/4 cup (86 grams)
- Red onion, chopped - 3 tbsp (30 grams)
- Cashews, raw and unsalted - 1 oz (28 grams)
INGREDIENTS FOR DRESSING:
- Greek yogurt, non-fat, plain - 2 oz (56 grams)
- Dijon mustard - 2 tsp (10 grams)
- Red wine vinegar - 1/2 tbsp (8 grams)
- Agave syrup - 1/2 tsp (4 grams)
- Olive oil - 1 tsp (4 grams)
- Sea salt - 1/8 tsp (pinch)
- Black pepper - 1/8 tsp (pinch)
INSTRUCTIONS:
- Boil the potato: Fill a small pot with water halfway and set to boil. Peel and chop the potato into small cubes. Add them to the pot and boil for about 10-12 minutes. Don’t overcook them or they will get mushy (you want them to have a bit of bite left in them). Drain the water when cooked. Set aside to let them cool down to about room temperature.
- Prepare the remaining ingredients. Shred the rotisserie chicken. Lightly steam or boil the green beans or unfreeze if using frozen. Chop the red onion.
- In a separate bowl, mix all of the ingredients for the mustard dressing.
- Add all ingredients to a bowl and gently mix in the mustard dressing. Serve and enjoy!
