Pineapple Sriracha Chicken

INGREDIENTS:
- Red bell pepper - 1/2 medium (70 grams)
- Red onion - 1/4 medium (38 grams)
- Pineapple, chopped - 2/3 cup (110 grams)
- Garlic clove - 1 medium (4 grams)(or 1 tsp minced garlic)
- Chicken breast, skinless, uncooked - 240 grams or 8.5 oz
- Olive oil - 1/2 tbsp (7 grams)
- Black pepper, ground - 1/4 tsp
- Brown rice, cooked - 3/5 cup (108 grams)(can replace with quinoa if intolerant to rice)
- Sesame seeds - 3 tsp (9 grams)
- Cilantro, chopped fresh leaves - 3 tbsp (6 grams)
INGREDIENTS FOR SAUCE:
- Apple cider vinegar - 1 1/2 tbsp (23 grams)
- Agave syrup - 1 tsp (7 grams)
- Dijon mustard - 1 tsp (5 grams)
- Soy sauce, low sodium - 1 tsp (5 grams)
- Sriracha sauce - 1 tsp (5 grams)(you can buy it here)
- Water - 1 tbsp (15 grams)
- Cornstarch or all-purpose flour - 1 tsp (3 grams)
INSTRUCTIONS:
- Cook the rice if using uncooked (1/5 cup uncooked).
- Chop the red bell pepper, red onion and pineapple. Finely chop the garlic. Chop the chicken breast. 3. Add all the sauce ingredients to a bowl and whisk until the flour is dissolved. Set aside.
- Place a large pan over medium heat and add the olive oil. Once hot, add the chicken and season with black pepper. Cook for 5-6 minutes or until it is three fourths cooked.
- Add the red onion, garlic and red bell pepper. Cook for another 5 minutes.
- Move everything to one side of the pan and add the pineapple to the empty side. Cook for 1-2 minutes.
- Turn off the heat and add the sauce. Gently mix everything and let stand for about a minute.
- Serve with cooked brown rice (about 3 tbsp per serving) and garnish with cilantro (1 tbsp per serving, optional) and sesame seeds (1 tsp per serving).
*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for 3-4 days.
