Pomodoro Pasta (Pre-Op)

INGREDIENTS:
- Whole wheat pasta, uncooked - 150 grams
- Shallot - 1 medium (50 grams)(can sub with equal amount of yellow onion)
- Garlic clove - 2 medium (8 grams of 2 tsp minced garlic)
- Basil, fresh leaves - 2 handful (20 grams)
- Grape tomatoes - 450 grams
- Olive oil - 1/2 tbsp (7 grams)
- Oregano, dried leaves - 1/4 tsp
- Red chili flakes - 1/8 tsp
- Vegetable stock cube - 1 cube (10 grams)
- White balsamic vinegar - 3 tbsp (45 grams)
- Sea salt - 1/2 tsp
- Black pepper, ground - 1/4 tsp
- Hemp seeds 2 tsp (7 grams)
INSTRUCTIONS:
- Cook the pasta according to instructions in the package. Do not use any extra oil or salt.
- Prepare your ingredients. Chop the shallot, finely chop the garlic, chop the basil leaves, and slice the grape tomatoes in halves.
- Place a large pan (make sure to have a lid for it) over medium-low heat and add the olive oil. Once hot, add shallot, garlic, basil leaves, oregano and chili flakes. Cook for 2-3 minutes or until fragrant.
- Add the tomatoes, veggie stock cube, balsamic vinegar, salt and pepper. Try to break apart to veggie stock cube as much as possible. Gently mix, cover and let stand for 7-8 minutes. Then turn off the heat.
- Drain the water from the pasta once it is done cooking and add the pasta to the pan with the tomatoes. Gently mix and let stand for a minute.
- Serve and garnish with hemp seeds (1 tsp per serving). Enjoy!
*Note: Mild spicy; omit red chili flakes if desired. Divide equally by the listed number of servings. Stays fresh in the refrigerator for 1-2 days. If you can’t find white balsamic vinegar you can substitute it with white wine vinegar plus 1 tsp of sugar. You can also use 1 tsp dried basil instead of the fresh basil leaves.

Nutritionist notes: Pasta is not the enemy. The real enemy are the sauces that we accompany it with. Tomato based pasta recipes are typically low in calories if they use only a bit of oil. Please note that this recipe if for future gastric sleeve patients that need to lose weight before their surgery. Do not follow this recipe if you already had your surgery.
