Quinoa Chicken Citrus Salad
- Time: 20 minutes (add 10 minutes if using uncooked quinoa)

INGREDIENTS:
- Chicken breast, skinless, uncooked - 180 grams or 6.4 oz
- Olive oil - 1 tsp (5 grams)
- Quinoa, cooked - 1 cup (185 grams)(or 1/3 cup uncooked)
- Spinach - 2 small handful (60 grams or 2.1 oz)
- Almonds - 28 grams or 1 oz
- Cranberries, dried - 3 tbsp (30 grams)
INGREDIENTS:
- Balsamic vinegar - 1 tbsp (15 grams)
- Dijon mustard - 1/2 tsp (3 grams)
- Orange, juice only - 1/2 medium (or 1/5 cup orange juice)
- Sea salt - 1/4 tsp
- Black pepper, ground - 1/4 tsp
INSTRUCTIONS:
- Chop the chicken breast. Add the olive oil to a pan over medium heat. Once hot, add the chicken and season with a pinch of salt and pepper. Cook for about 10 minutes or until fully cooked. Once done, turn off heat and set aside to cool down.
- Lightly chop the spinach and almonds.
- Mix all the dressing ingredients in a bowl.
- Mix everything except the dressing in a large bowl. Serve and add about 1 tbsp of the dressing per serving. Enjoy!
*Note: Quinoa for this recipe is best used cold. Add the dressing only when serving, store separately in its own container. Divide everything equally by the listed number of ingredients. Stays fresh in the refrigerator for 2-3 days.
