Rotisserie Chicken & Quinoa Bowl Family Recipe

INGREDIENTS:
- Red onion - 1/2 medium (75 grams)
- Vegetable broth, low sodium - 3 cups (720 grams)
- Quinoa, uncooked - 1 1/2 cups (255 grams)
- Chicken rotisserie, whole - 1 medium-large (should yield about 540 grams of meat, no bones, remove skin)
- Peas, frozen - 3 cups (400 grams)
- Broccoli - 3 cups (300 grams)
- Sesame seeds - 6 tsp (18 grams)
- Scallions - 2 stalks (30 grams)
INSTRUCTIONS:
- Chop the red onion.
- Place the vegetable broth in a large pot over high heat and bring to a boil. Once boiling, add the quinoa and the chopped red onion, stir with a spoon, cover and reduce the heat to medium-low. Cook for about 12 minutes or until all the water has been absorbed.
- While the quinoa cooks, extract all the meat from the rotisserie chicken and set aside. The chicken should yield about 540 grams of meat.
- Lightly steam the peas and broccoli. If using frozen simply unfreeze in the microwave or in a pot with a bit of boiling water.
- Once the quinoa is ready, add the chicken to it and mix gently.
*Gastric sleeve servings: Serve 165 grams of the chicken and quinoa mix. Garnish with 1 tsp of sesame seeds and chopped scallions to taste. Do not add any broccoli or peas. Enjoy!
*Regular servings: Equally divide the remaining food by the listed number of regular servings. Garnish with scallions and sesame seends. Enjoy!
Note: Stays fresh in the refrigerator for 3-4 days. Can also be frozen for up to 2 weeks.
