"Rotisserie" Chickpeas and Savory Quinoa

INGREDIENTS:
- Chickpeas, cooked - 2 cups (328 grams)
- Paprika, ground - 1/2 tsp
- Sea salt - 1/4 tsp
- Black pepper, ground - 1/4 tsp
- Olive oil - 1 tbsp (14 grams)
- Quinoa, uncooked - 1/3 cup (57 grams)
- Red onion - 1/4 medium (38 grams)
- Vegetable broth, low sodium - 2/3 cup (160 grams)
- Scallions - 1 stalk (15 grams)
- Sesame seeds - 1 /12 tsp (5 grams)
INSTRUCTIONS:
- Preheat the oven to 200°C or 400°F.
- Drain and rinse the chickpeas. Pat them dry with a kitchen towel and place them in a large bowl. Add the olive oil, paprika, sea salt and black pepper. Mix gently. Place in a baking dish (no parchment paper or aluminum foil necessary) and roast in the oven for 30 minutes. Let them cool for a couple of minutes when done.
- Chop the red onion.
- For the quinoa: Place the vegetable broth in a medium pot and set to boil. Once boiling, add the quinoa and the red onion, stir with a spoon, cover and reduce the heat to low. Cook for about 12 minutes or until all the water has been absorbed.
- Serve the chickpeas and quinoa and garnish with chopped scallions and sesame seeds (1/2 tsp per serving). Enjoy!
