Salmon with Avocado Salsa

INGREDIENTS:

  • Salmon, uncooked - 160 grams or 5.7 oz
  • Olive oil - 1 tsp (5 grams)
  • Paprika, ground - 1/4 tsp
  • Black pepper, ground - 1/4 tsp
  • Sea salt - 1/2 tsp
  • Avocado - 1 small-medium (100 grams)
  • Red onion - 1/4 medium (38 grams)(may replace with same amount of red bell pepper)
  • Cilantro, chopped fresh leaves - 2 tbsp (4 grams)
  • Hemp seeds - 2 tsp (7 grams)
  • Lime, juice only - 1/2 medium

INSTRUCTIONS:

  1. Pre-heat the oven to 400° F or 200°C.
  2. Dry the salmon with a paper towel and coat with the olive oil, paprika, black pepper, and half of the sea salt. Make sure to coat both sides of the salmon.
  3. Bake the salmon for 17-20 minutes.
  4. Chop the avocado, red onion and cilantro. Add them to a medium-sized bowl. Add the remaining sea salt, hemp seeds, and squeeze the lime juice.
  5. When the salmon is ready, serve along with the avocado salsa. Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for 1-2 days. The avocado may turn a bit brown when stored but it is still good to eat if eaten within the recommended storage life.
