Salsa Verde Chicken Tacos

INGREDIENTS:
- Chicken thighs, skinless and boneless, uncooked - 240 grams or 8.5 ounces
- Sea salt - 1/4 tsp
- Black pepper, freshly ground - 1/4 tsp
- Olive oil - 1 tsp (5 grams)
- Green salsa - 1/2 cup (96 grams)(your preferred brand)
- Greek yogurt, non-fat, plain - 2 tbsp (28 grams)
- White wine vinegar - 1/2 tbsp (8 grams)
- Corn tortilla - 3 medium (84 grams)(should contain no more than 60 calories each)
- Green cabbage, chopped - 1/2 cup (33 grams)
- Yellow onion, xhopped - 3 tbsp (30 grams)
- Cilantro, fresh leaves, chopped - 3 tbsp (6 grams)(or to taste)
- Lime, juice only - to taste
INSTRUCTIONS:
- Season the chicken thighs with sea salt and black pepper.
- Place a medium pan over medium heat. Once hot, add the olive oil and the chicken thighs. Cook for about 12-15 minutes or until fully cooked (flip once halfway through). Turn off the heat.
- Transfer the thighs to a clean cutting board and thinly slice them. Add them back to the pan over medium-low heat, together with the green salsa, Greek yogurt and white wine vinegar. Mix gently and cook for 2-3 minutes. Turn off the heat.
- Add 2 ounces of the chicken to a corn tortilla and garnish with chopped green cabbage, onion, cilantro, and lime to taste. Enjoy!
*Note: Divide equally by the listed number of servings. One serving equals 1 taco plus an additional ounce of chicken on the side. Stays fresh in the refrigerator for 3-4 days. Build your tacos only when you will eat them. Store the chicken separately from all other ingredients. Use the green salsa of your choice.
