Salsa Verde Chicken Tacos Family Recipe

INGREDIENTS:
- Chicken thighs, skinless and boneless, uncooked - 720 grams or 25 oz
- Sea salt - 3/4 tsp
- Black pepper, ground - 3/4 tsp
- Olive oil - 1 tbsp (14 grams)
- Green salsa - 1 1/2 cup (288 grams)
- Greek yogurt, non-fat, plain - 1/3 cup (75 grams)
- White wine vinegar - 1 1/2 tbsp (23 grams)
- Corn tortilla - 15 medium (420 grams)
- Green cabbage, chopped - 2 cup (130 grams)
- Yellow onion, chopped - 1 medium (160 grams)
- Cilantro, fresh leaves, chopped - 1 handful (20 grams)
- Lime, juice only - 2 medium (88 grams)
INSTRUCTIONS:
- Season the chicken thighs with sea salt and black pepper.
- Place a large pan over medium heat. Once hot, add the olive oil and the chicken thighs. Cook for about 15 minutes or until fully cooked. Turn off the heat. (Note: if you’re pan isn’t big enough to fit everything, divide cooking the chicken into 2 rounds).
- Transfer the thighs to a clean cutting board and thinly slice them. Add them back to the pan over medium-low heat, together with the green salsa, Greek yogurt and white wine vinegar. Mix gently and cook for 2-3 minutes. Turn off the heat.
Gastric sleeve serving: Add 2 ounces of the chicken to a corn tortilla and garnish with chopped green cabbage, onion, cilantro, and lime to taste. Serve an additional ounce of the chicken on the side. Enjoy!
Note: Recipe makes 15 tacos, of which 2 are for the gastric sleeve servings. Regular serving is about 3 tacos. Stays fresh in the refrigerator for 3-4 days. Build the tacos only when you will eat them, not for storing. Store the chicken separately from all other ingredients. Use the green salsa of your choice.
