Scrambled Eggs with Turkey Ham & Veggies

INGREDIENTS:

  • Egg, whites - 3 large (99 grams)
  • Smoked turkey breast (deli meat) - 1 oz (28 grams)
  • Yellow onion, chopped - 2 tbsp (20 grams)
  • Spinach, fresh - 1/2 oz (14 grams)
  • Grape tomatoes - 1 oz (28 grams)
  • Olive oil - 1 tsp (5 grams)
  • Sea salt - 1/4 tsp
  • Hemps seeds - 1 tsp (3 grams)

INSTRUCTIONS:

  1. Separate the egg yolk from the egg whites if using whole eggs. Discard the yolks. Chop the turkey breast, yellow onion, spinach, and grape tomatoes.
  2. Place a non-stick pan over medium-low heat. Once hot add the olive oil and chopped onion. Cook for 1 minute.
  3. Add the turkey, spinach, grape tomatoes, and egg whites. Season with sea salt and cook for 3-4 minutes or until egg whites are fully cooked.
  4. Serve and garnish with hemp seeds. Enjoy!

*Note: Stays fresh in the refrigerator for 1-2 days.
