Shrimp Ceviche

INGREDIENTS:

  • Shrimp, uncooked, peeled and deveined - 240 grams or 8.5 ounces
  • Tomato - 1 large (150 grams)
  • Red onion - 1/3 medium (50 grams)
  • Cilantro, fresh leaves - 1 small handful (10 grams)
  • Lime, juice only - 1 medium (44 grams)
  • Soy sauce, low sodium - 1/2 tsp
  • Sea salt - 3/4 tsp
  • Black pepper, ground - 1/8 tsp
  • Paprika, ground - 1/8 tsp
  • Hemp seeds - 1 tbsp (10 grams)
  • Avocado - 3/4 small-medium (75 grams)

INSTRUCTIONS:

  1. Take a medium-sized pot and fill it with water three-quarters full. Place over high heat and bring to a boil. Once boiling, add the shrimp (please see notes for instructions on shrimp). Boil for 1-2 minutes and immediately run under cold water to stop the cooking process. Once cooled, chop and add to a large sealable container.
  2. Chop the tomato, red onion, and cilantro. Add them to the shrimp together with the lime juice, soy sauce, sea salt, pepper, paprika, and hemp seeds. Seal and mix gently.
  3. Serve with 1/4 chopped avocado and enjoy!

*Note: For best results place the container with the ceviche in the refrigerator for 1-2 hours. This helps increase the flavor. Divide equally by the listed number of servings. Stays fresh in the refrigerator for 3 days. Add the avocado only when serving. Shrimp should be peeled, clean (deveined), and without a head and tail. If frozen, thaw under running cold water or in the refrigerator overnight. Pat dry and remove the tails before cooking. You may also peel and devein them yourself if desired.
