Shrimp, Spinach and Feta Cheese Salad

INGREDIENTS:

  • Shrimp, uncooked, peeled and deveined - 2.5 oz (75 grams)
  • Olive oil - 1/8 tsp
  • Sea salt - 1/8 tsp
  • Black pepper, ground - 1/8 tsp
  • Lemon, juice only - 1/2 tbsp (6 grams)
  • Yellow bell pepper - 1/8 medium (20 grams)
  • Grape tomatoes - 3 medium (20 grams)
  • Avocado - 1/4 medium (25 grams)
  • Spinach, fresh - 1 small handful (20 grams)
  • Feta cheese - 1 oz (30 grams)

INSTRUCTIONS:

  1. Place a small pan over medium heat. Once hot, add the olive oil and shrimp (check notes for details on shrimp). Season with sea salt and black pepper and cook for 1-2 minutes on each side. Squeeze a bit of lemon juice on top of the shrimp at the end. Do not overcook or they will become rubbery. Transfer to a clean plate when done.
  2. Chop bell pepper, grape tomatoes, avocado and spinach. Combine in a bowl together with the shrimp and mix.
  3. Squeeze a bit of lemon juice (to taste) over the salad and crumble the feta cheese. Mix everything. Serve and enjoy!

*Note: Stays fresh in the refrigerator for up to 1 day. Shrimp stays fresh for 2 days, so if you want to you can cook the double amount of shrimp and save half for the next day. Simply prepare the other salad ingredients the next day.

Nutritionist notes: Shrimp should be peeled, clean (deveined), and without a head and tail. If frozen, thaw under running cold water or in the refrigerator overnight. Pat dry and remove the tails before cooking. You may also peel and devein them yourself if desired.
