Southwest Skillet Ragú Family Recipe

INGREDIENTS:
- Whole-wheat pasta, uncooked - 250 grams or 9 ounces (can replace with chickpea pasta if intolerant to wheat pasta)
- Yellow onion - 1 1/2 medium (240 grams)
- Red bell pepper - 2 medium (280 grams)
- Garlic clove - 3 medium (12 grams or 3 tsp minced garlic)
- Ground beef, 90%+ lean, uncooked - 28 oz or 800 grams
- Olive oil - 1 tbsp (14 grams)
- Chili powder - 2 tsp
- Cumin, ground - 1 tsp
- Paprika, ground - 1 tsp
- Sea salt - 1 1/2 tsp
- Black pepper, freshly ground - 1 tsp
- Crushed tomatoes - 2 1/4 cup (545 grams)
- Nutritional yeast - 1 tbsp (optional but recommended)
INSTRUCTIONS:
- Cook the pasta according to the instructions on the package. Do not use any oil or salt to cook it. Set aside when done.
- While the pasta cooks, chop the onion and bell pepper, finely chop the garlic, and measure all other ingredients. Combine all the spices in a small bowl.
- Place a large pot or skillet over medium heat. Once hot, add the olive oil and ground beef. Cook for 2 minutes and then add the onions, garlic, bell pepper, and spices. Mix and cook for 8 more minutes or until the beef is fully cooked.
- Add the crushed tomatoes, cooked pasta and nutritional yeast. Mix gently and turn off the heat. Let stand for about a minute. Serve and enjoy!
*Gastric sleeve servings: Measure 170 grams or 6.0 ounces of the dish (both pasta and the meat). Enjoy!
*Regular servings: Divide the remaining food by the listed number of regular servings. Enjoy!
*Note: Stays fresh in the refrigerator for 3-4 days. We recommend using farfalle, elbows, or fusilli pasta, but feel free to use whichever you like as long as it is whole-wheat.
