Thai Carrot Soup

INGREDIENTS:
- Yellow onion - 1/3 medium (53 grams)
- Garlic clove - 2 medium (8 grams)
- Carrot - 3 medium (240 grams)
- Coconut oil - 1 tbsp (14 grams)
- Basil, dried leaves - 1/2 tsp
- Sea salt - 1/2 tsp
- Black pepper, ground - 1/4 tsp
- Vegetable broth, low sodium - 1 cup (240 grams)
- Water - 1 cup (240 grams)
- Peanut butter - 2 tbsp (32 grams)
INSTRUCTIONS:
- Chop the onion and garlic. Peel and chop the carrots. Measure the broth and water.
- Place a large pot over medium-low heat. Once hot, add the coconut oil, onion, and garlic. Cook for 1-2 minutes and then add the carrots. Cook for 5 more minutes. Stir occasionally.
- Add the basil, sea salt, black pepper, vegetable broth, and water. Mix, cover, and cook for 15 minutes.
- Turn off the heat and carefully transfer to a blender. Add the peanut butter and blend for 1 minute or until no chunks are left (make sure the lid is secured in place). Serve warm and enjoy!
*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for 3-4 days.

Nutritionist notes: Early on during the recovery, it is important to add some healthy fats like those from peanut butter and coconut oil to provide our bodies with energy. Fats are high in calories so they can give us the energy we need with very little of amounts. However, it is important to keep them in moderation so we don't get too many calories, especially once you have fully recovered.
