Thai Quinoa Salad

INGREDIENTS:
- Quinoa cooked - 3/4 cup (139 grams)(or 1/4 cup uncooked)
- Purple cabbage, chopped - 1 cup (65 grams)
- Carrot - 1 medium (80 grams)
- Edamame beans, cooked - 3/4 cup (116 grams)
- Cashews, raw and unsalted - 1 oz (28 grams)
INGREDIENTS FOR DRESSING:
- Peanut butter - 2 tbsp (32 grams)
- Soy sauce, low sodium - 1 1/2 tbsp (23 grams)
- Ginger root, grated - 1 tsp (3 grams)
- Agave syrup - 1/2 tbsp (11 grams)
- Red wine vinegar - 1 tbsp (15 grams)
- Sesame oil - 1 tsp (3 grams)
- Water - 1 tbsp (15 grams)
INSTRUCTIONS:
- Cook the quinoa if using uncooked (1/4 cup uncooked). It is best if used cold.
- Chop the purple cabbage and grate the carrot.
- Heat up the edamame either in the microwave or by adding them to a small pot with a bit of boiling water.
- Add all the dressing ingredients to a bowl and whisk until the peanut butter is dissolved.
- Add the purple cabbage, grated carrot, edamame beans, cashews and cooked quinoa to a large bowl and mix gently. Add the dressing only when serving (about 2 tbsp per serving). Mix and enjoy!
*Note: Divide equally by the listed number of servings. Store salad and dressing in separate containers. Stays fresh in the refrigerator for up to 3 days. Tip: If you like spicy food feel free to add a bit of sriracha sauce.
