Tropical Salmon Pineapple Salad

INGREDIENTS:
- Salmon, uncooked - 220 grams or 7.8 oz
- Pineapple, chopped - 1/2 cup (83 grams)
- Red onion - 1/4 medium (38 grams)
- Kale, chopped - 3 small handfuls (60 grams)
- Sea salt - 1/4 tsp
INGREDIENTS FOR DRESSING:
- Avocado - 1 small-medium (100 grams)
- Cilantro, fresh leaves - 1 small handful (10 grams)
- Lemon, juice only - 1/4 medium (12 grams)
- Garlic powder - 1/4 tsp
- Black pepper, ground - 1/8 tsp
- Water - 2 tbsp (30 grams)
INSTRUCTIONS:
- Preheat the oven at 200°C or 400°F.
- Add the salmon to a baking dish with parchment paper or aluminum foil and bake for 17-20 minutes. Remove from oven and let it cool down a bit.
- Chop the pineapple and red onions.
- Add the kale and sea salt to a large bowl and using your hands, massage the leaves for about 30 seconds or until they become darker colored and fragrant.
- Add all the dressing ingredients to a food processor and mix until creamy.
- Break down the cooked salmon into bits and add them to the bowl with kale along with the pineapple and red onion. Add the dressing only when serving. Enjoy!
*Note: Store the dressing in a separate container and in the refrigerator. Divide equally by the listed number of ingredients. Stays fresh in the refrigerator for 2-3 days. The dressing might turn slightly brownish when stored due to oxidation of the avocado. This is normal and completely fine to eat.
