Turkey Taco Stuffed Bell Peppers

INGREDIENTS:
- Red bell peppers - 4 medium (560 grams)
- Ground turkey (or beef), 90%+ lean, uncooked - 1 pound (460 grams)
- Olive oil - 1 tbsp (14 grams)
- Taco seasoning - 2-3 tbsp
- Greek yogurt, non-fat and plain - 4 ounces (113 grams)
- Hemp seeds - 2 tbsp (20 grams)
- Nutritional yeast - 1 tbsp (4 grams)
- Black beans, cooked - 2 cups (344 grams)
- Green or red salsa - to taste
- Cilantro, freshly chopped - to taste
INSTRUCTIONS:
- Pre-heat the oven to 400°F or 200°C.
- Cut the bell peppers in halves and remove the seeds and membrane. Place the bell peppers on a baking sheet lined with aluminum foil or parchment paper and bake for 15 minutes.
- While it bakes, place a pan over medium heat. Once hot, add the olive oil and the ground turkey. Cook for about 8 minutes, and then add the taco seasoning. Mix and cook for another minute. Turn off the heat.
- Drain the black beans and gently mix them in a bowl together with the cooked ground turkey, Greek yogurt, hemp seeds and nutritional yeast.
- Remove the bell peppers from the oven and fill them with the turkey filling. Be very careful not to burn yourself (if very hot wait a couple of minutes for the bell peppers to cool down before filling them). Place the stuffed bell peppers back in the oven and bake for another 10 minutes.
- Serve and garnish with red or green salsa and chopped cilantro (optional). Enjoy!
*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 3 days. Store the salsa and cilantro separately, and only add it when serving.
Recommended serving size for bariatric patients = 1 half pepper.
Recommended serving size for non-bariatric family members = 2 half peppers plus additional steamed veggies of choice if desired.
