Waldorf Chicken Salad

INGREDIENTS:

  • Rotisserie chicken, cooked, skinless, light and dark meat combined - 2 oz (57 grams)
  • Red grapes, seedles - 1 oz (28 grams)
  • Green apple - 1/4 medium (42 grams)
  • Chopped red onion - To taste (optional)
  • Walnuts, chopped - 1/2 oz (14 grams)

INGREDIENTS FOR DRESSING:

  • Greek yogurt, non-fat, plain - 1 oz (28 grams)
  • Lemon, juice only - 1 tsp (5 grams)
  • Celery seeds - 1/8 tsp (pinch)(you can buy them here)
  • Basil, dried leaves - 1/8 tsp (pinch)
  • Sea salt - 1/8 tsp (pinch)
  • Black pepper, freshly ground - 1/8 tsp (pinch)

INSTRUCTIONS:

  1. Shred the rotisserie chicken. Slice or chop the green apple and red onion and cut the grapes in half. Add everything to a bowl.
  2. In a separate smaller bowl, mix all of the dressing ingredients.
  3. Gently mix the dressing into the salad and top it off with chopped walnuts. Serve and enjoy!

*Note: Stays fresh in the refrigerator for 1 day.
