Zesty Spinach & Chicken Pasta

INGREDIENTS:
- Whole-wheat pasta, uncooked - 3 oz (85 grams)
- Chicken breast, skinless, uncooked - 8.5 oz (240 grams)
- Olive oil - 1 tsp (5 grams)
- Nutmeg, ground - 1/4 tsp
- Se salt - 1/4 tsp
- Black pepper, freshly ground - 1/4 tsp
- Garlic clove - 2 medium (8 grams or 2 tsp minced)
- Spinach, fresh - 4 oz (113 grams)
- Lemon, juice only - 1/4 medium (12 grams)(or to taste)
- Soy sauce, low sodium - 1/2 tsp (3 grams)
- Nutritional yeast - 2 tsp (3 grams)
- Hemp seeds - 1/2 tbsp (5 grams)
INSTRUCTIONS:
- Cook the pasta according to instructions on the package. Do not use any oil or salt to cook it.
- Cut the chicken breast into small cubes.
- Place a pan over medium heat. Once hot, add the olive oil and chicken. Cook for 6-7 minutes.
- Add the spices (nutmeg, salt, pepper) and garlic. Cook for another minute.
- Lastly, add the spinach and cook for a final 2 minutes or until chicken is fully cooked. Turn off the heat.
- Transfer to a bowl and add the lemon juice, soy sauce, nutritional yeast, and hemp seeds. Gently mix everything together and serve over the cooked pasta. Enjoy!
*Note: Divide equally by the listed number of ingredients. Stays fresh in the refrigerator for about 3 days.
